Instructions

  1. Heat the Oil: Start by heating about 3 cups of vegetable oil in a deep pot or Dutch oven over medium-high heat. Aim for a temperature of around 350°F (175°C). Use a candy thermometer to ensure accuracy.
  2. Prepare the Batter: In a mixing bowl, combine pancake mix, milk, and the egg. Whisk until smooth. The batter should be slightly thicker than regular pancake batter. If it feels too runny, add more pancake mix gradually until it reaches the right consistency.
  3. Prep the Marshmallows: (Optional) For an extra crispy coating, freeze the marshmallows for about 30 minutes before proceeding. This helps them hold their shape better during frying.
  4. Coat the Marshmallows: Dip each marshmallow individually into the prepared batter, ensuring it’s fully coated. Use a spoon to gently remove excess batter and allow it to drip back into the bowl.
  5. Fry the Marshmallows: Carefully place the battered marshmallows into the hot oil. Fry in small batches—2 to 3 at a time—to avoid overcrowding. Cook for 30 seconds to 1 minute, turning occasionally, until they’re golden brown all over. Avoid overcooking, as this may cause the marshmallow filling to melt out.
