- 4 medium russet potatoes
- 1 cup cottage cheese (low-fat or full-fat)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- ½ teaspoon paprika
- Salt and pepper to taste
- Fresh herbs (chives, parsley, or dill) for garnish
Instructions
- Preheat the Air Fryer: Set the air fryer to 400°F (200°C).
- Prepare the Potatoes: Wash the potatoes thoroughly and poke a few holes in each with a fork.
- Air Fry the Potatoes: Coat the potatoes with olive oil and season with salt and pepper. Place them in the air fryer and cook for 35–40 minutes or until tender.
- Slice and Scoop: Allow the potatoes to cool slightly. Slice them in half and scoop out most of the flesh, leaving a thin layer inside the skin.
- Prepare the Filling: Mix the cottage cheese with garlic powder, paprika, and a pinch of salt.
- Fill and Cook Again: Fill each potato skin with the cottage cheese mixture. Return them to the air fryer and cook for an additional 5–7 minutes until the tops are golden and bubbly.
- Garnish and Serve: Sprinkle with fresh herbs and serve hot. Enjoy!
