  • 1 cup cottage cheese (low-fat or full-fat)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • Salt and pepper to taste
  • Fresh herbs (chives, parsley, or dill) for garnish

Instructions

  1. Preheat the Air Fryer: Set the air fryer to 400°F (200°C).
  2. Prepare the Potatoes: Wash the potatoes thoroughly and poke a few holes in each with a fork.
  3. Air Fry the Potatoes: Coat the potatoes with olive oil and season with salt and pepper. Place them in the air fryer and cook for 35–40 minutes or until tender.
  4. Slice and Scoop: Allow the potatoes to cool slightly. Slice them in half and scoop out most of the flesh, leaving a thin layer inside the skin.
  5. Prepare the Filling: Mix the cottage cheese with garlic powder, paprika, and a pinch of salt.
  6. Fill and Cook Again: Fill each potato skin with the cottage cheese mixture. Return them to the air fryer and cook for an additional 5–7 minutes until the tops are golden and bubbly.
  7. Garnish and Serve: Sprinkle with fresh herbs and serve hot. Enjoy!
