For the Madeleine Cookies:

Instructions
- Prepare the Madeleine Cookies: Preheat your oven to 375°F (190°C). Grease and flour a Madeleine pan. In a bowl, sift together the flour, baking powder, and salt. Set aside. Beat the eggs and sugar until light and fluffy (about 5 minutes). Add the vanilla extract and lemon zest, then fold in the dry ingredients. Gradually mix in the melted butter until the batter is smooth.
- Spoon the batter into the prepared Madeleine molds.
- Bake for 10–12 minutes or until the edges are golden brown. Remove from the oven and cool.
- Prepare the Cream Layer: Whip the heavy cream with powdered sugar and vanilla until stiff peaks form.
- Assemble the Cake: Layer the cooled Madeleines with whipped cream. Alternate between cookies and cream to build the cake. Top with fresh berries or powdered sugar for decoration.
- Chill and Serve: Refrigerate for at least 1 hour before serving to allow the flavors to meld.
Notes
- For softer Madeleines, do not overmix the batter.
- Chilling the batter before baking improves the texture and helps achieve the signature hump.
- Serve with fresh berries or a drizzle of chocolate for extra flavor.
