- 1 cup Breadcrumbs
- 2 large Eggs

- chopped, 2 tablespoons Parsley
- 1 tablespoon Lemon juice
- ½ teaspoon Salt
- ¼ teaspoon Black pepper
- Vegetable oil for frying
Instructions
- Prepare the Salmon Mixture: Drain the canned salmon and flake it into a bowl, removing large bones if preferred. Add breadcrumbs, eggs, onion, parsley, lemon juice, salt, and black pepper. Mix well.
- Shape the Patties: Divide the mixture into 6–8 portions and shape into patties about ½ inch thick.
- Cook the Patties: Heat vegetable oil in a skillet over medium heat. Fry the patties for 3–4 minutes per side, or until golden brown and crispy. Transfer to a paper towel-lined plate to absorb excess oil.
- Serve: Enjoy warm with tartar sauce, lemon wedges, or your favorite sides.

- For a gluten-free option, substitute breadcrumbs with almond flour or crushed gluten-free crackers.
- Add a pinch of cayenne pepper for a spicy twist.
